Local Spirits Are On The Rise

“We celebrate our love of the area and fermentation, and our space is a celebration of what makes Eugene so special,” says founder Emily Jensen. “We live in this garden of lushness and bounty. We can take what grows in the region and distill with it.”

Thinking Tree celebrates milling, mashing, fermenting and distilling from farm to flask, and the owners are planning a grand opening celebration in the coming months for the Whiteaker distillery. All fruits, tubers and grains come from the region for Thinking Tree’s vodkas and gins, with molasses for their rum sourced through GloryBee Foods. (Whiskies and bourbons are in the midst of being aged for future release, and Thinking Tree also is distilling a grape brandy.)

“We wanted the space to embody what we love about the art, science, and engineering about the distilling process,” says Jensen, who adds that she is excited to have Thinking Tree be available not just for spirit-lovers, but as a local resource for the community.
