Whiteaker SolERA Barrel Aged Rum
Traditional Colonial Style Rum aged in American Oak Barrels; 40% ABV (80 proof)
This Willamette Valley rum begins its life as unsulphured molasses which is fermented then distilled in copper pots before being aged in American oak barrels that once housed Kentucky Bourbon. The barrels are filtered into one another using a traditional Caribbean solera method, the oldest of the blend being over seven years of age.
Nose: Predominant notes of almond paste with a delicate note of nutmeg throughout that is complimented by a muted earthiness on the finish.
Palate: Rich and full on the palate with notes of sweetgrass, candied lemon peel, fresh cherries, and dark chocolate at the forefront with a light thread of nutmeg that carries over from the oak finishing.
